Ivory Coast eyes cassava for its bread as wheat prices surge
The war in Ukraine led to an increase in wheat prices, some Ivory Coast replaced the cassava flour, a local product instead of the wheat flour for baking bread. Normally, Ivorian imports wheat from France instead of production. Unfortunately, because of the raised prices of wheat, bakers must find something that can be replaced, it’s cassava products. However, using a lot of cassava flour affects the mineral and protein of the bread compared to using usual wheat.
